- 1/4 cup Mrs. Dogs's Green Chile Pistachio Nuts, coarsely chopped
- 1- 10 oz. box of Couscous
- 1/4 cup packed fresh mint leaves, chopped.
- 2-1/4 cups water
- 1/2 tsp. salt
- 1 tsp. fresh lemon juice
In a 3-quart saucepan, bring 2-1/4 cups water and 1/2 tsp. salt to a boil. Stir 1 box couscous into pan and let stand, covered, off the heat for 5 minutes.
Fluff couscous with a fork and transfer to a bowl.
Stir in pistachios, min, oil and lemon juice, & season with salt and pepper.
